Enchiladas Recipes

If you are looking for recipes that are excellent snack time food for your baby then you need to try the enchiladas. These recipes are easy to make and unlike the Mexican version are healthier as they are baked instead of fried. Recipes that include wraps are not only fun for parent to prepare but are also fun to eat.

Most parents find this an easy way to ensure that their kids are fed with seasonal and nutritious vegetables.

Corn tortillas are excellent for your kid’s dietary needs as it is high in potassium, calcium and fiber. This recipes makes use of ground beef; you can even substitute it for ground chicken or bits of tofu if you are a vegetarian.

Meat or chicken is high in iron, proteins, potassium and fiber. Cheese is full of calcium and vitamins that are good for the development of your baby’s teeth and bones.


  • Corn tortillas – 12
  • Enchilada sauce mix – 1 packet
  • Ground beef / chicken / tofu bits – 1 cup
  • Finely chopped onion – 1
  • Shredded cheese (cheddar / Monterey Jack) – 2 cups
  • Black olives sliced finely – ¼ cup
  • Olive oil- 1 tbs


Prepare the enchilada sauce mix as directed on the packet. In a saucepan, add some oil and sauté the onions and ground beef till done. You can drain off the excess fat if any. Add in half of the enchilada sauce and mix well till cooked.

Put a spoonful of this mixture on each tortilla and roll to form a wrap. Place these rolls on a baking dish and spoon the other half of the enchilada sauce over it, evenly. Sprinkle grated cheese and olives. Cover the dish with a foil and bake in a preheated oven at 200c/400F/Gas 6 for 20 minutes or till cheese melts.

You could even freeze a few for a quick snack at a later time. However make sure that you heat it well before allowing your kid to eat it.

    Ajay, I’m going to try your recipe primarily for one one ingredient, Olives! I love olives and including them in an enchilada is a great idea. Freezing the leftovers is also a great idea.
